Rumex acetosa. A hardy perennial plant that produces 8″ long narrow tender succulent green leaves with a slightly acid tang or lemony flavor that adds zest to salads. May also be cooked like spinach or used in soups. Leaves can be harvested over a long period of time. Remove flowering tops to keep leaves tender.
